Semi-wild tea trees are picked in late April, and the leaves are allowed to oxidize to become hongcha (literally red tea but known as black tea in the west). This special hongcha is then stone ground using the same machines as traditional Japanese matcha, resulting in a powdered tea similar to what was used during the Song dynasty in China.

This unique tea was not my favorite, and for the price this was a little disappointing. However I still need to experiment with milk to see if that changes my opinion.
